Apple Rhubarb Crumble


After apple picking I now have a lot of apples to eat and excited to try some desert recipes.

I found this recipe at epicurious and used that to make my crumble.

Topping:
3/4 cup flour
3/4 cup packed brown sugar
1/2 cup oats
1/2 teaspoon cinnamon
1/4 teaspoon cloves
6 tablespoons butter
1/2 cup chopped walnuts

Mix together flour, sugar, oats, cinnamon & cloves.
Add butter and mix by hand then until it begins to clump then add in walnuts

Filling
4 large peeled, cored and cut cortland apples
5 long pieces of rhubarb
3 tablespoons sugar
2 teaspoons flour
1/2 teaspoon vanilla

Mix all ingredients for the filling and put in the bottom of glass baking dish then cover with the topping and bake at 400 for about 45 minutes. Let it cool a bit before serving. It's delicious with a little ice cream and can be reheated and enjoyed later.
