Strawberry Shortcake



One of the treats of summer is Strawberry Shortcake. On these warm summer evenings I like to sit on the front porch and savor summer and what better way to do that than with this tasty treat?

There are 3 parts

Reduction sauce & Berries 
I had some blueberry wine so I decided to use that for the sauce, I simmered the wine until it reduced and thickened up a little then I took it off of the stove and poured it in to a bowl and tossed in the chopped strawberries

Biscuits
1 cup flour
1 Tablespoon granulated sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
4 Tablespoons butter (kept cold)
1/2 cup heavy cream
1/2 teaspoon vanilla

measure and mix together the dry ingredients (flour, sugar, baking powder, salt)
take butter out of fridge and cut into small pieces, with a fork mix the butter into the dry ingredients
make a whole in the center of the ingredients and pour in the cream and vanilla, mix with fork until incorporated but not over mixed
knead the dough by hand about six times
make dough into a 1" tall rectangle and put it in the over for 20 minutes to chill
preheat oven to 425
take the dough out and cut into about six biscuits
put biscuits on parchment on a cookie sheet and bake for about 20 minutes - check at 15 minutes - until golden brown on top


Whipped Cream
whipped up heavy cream and added a little maple syrup for a little extra sweetness

Once you have your 3 parts you can really assemble them anyway you want. I like to cut the biscuit in half and put strawberries and whipped cream in the center then put the 'top' of the biscuit back and add a few more strawberries and whipped cream.
