empanadas


Since we forgot to bring the empanada shells to our party last month we have about 100 of them in the freezer, so it seemed like a good time to start using them...

So I defrosted some of the Goya discos and made some ground beef and some spinach empanadas.

Beef:
ground beef
onion
garlic
poblano pepper
ground cumin
sofrito


Spinach:
spinach
delicata squash
onion
garlic
cheese
sofrito


I sauteed the ingredients until they were cooked, then put them in the discos and baked them at 350 for half an hour or until the discos were cooked.
